The study found that for every 10% increase in ultra-processed food consumption, there was a 9% decrease in dietary quality. People who consumed more unprocessed and minimally-processed foods tended to have higher intakes of fiber, protein, and micronutrients like vitamins and minerals. Those who consumed more ultra-processed foods tended to have higher intakes of added sugars, saturated fats, and sodium.

The findings of this study have important implications for public health, particularly as rates of obesity and diet-related chronic diseases continue to rise. By choosing more unprocessed and minimally-processed foods and limiting our intake of ultra-processed foods, we can improve our dietary quality and reduce our risk of chronic disease.
